Chilled Strawberry Soup

1 quart fresh strawberries cleaned and sliced

4 ounces softened cream cheese

½ cup of sugar

8 ounces of lemon yogurt

3 cups half and half

½ cup strawberry liqueur

In a food processor mix strawberries, cream cheese and sugar until it becomes smooth. On the pulse setting add in yogurt. Move mixture to a mixing bowl and whisk in half and half and strawberry liqueur. Refrigerate for 2 hours prior to serving. 

Peanut Butter Fruit Dip

8 ounces softened cream cheese (1 package)

7 ounces Fluff (1 small jar)

¼ Creamy peanut butter

Blend all ingredients together. Serve at room temperature with sliced fruit.

Grilled Blue Tomatoes

2 Medium to large tomatoes

½ cup blue cheese

2 Tablespoons olive oil

10-12 Leaves of fresh basil chopped

2 Tablespoons grated parmesan cheese

Salt and pepper

Cut tomatoes in half and scoop out the seeds from the cavity. Place tomatoes in a foil pan. Fill tomatoes with blue cheese. Sprinkle each with basil, parmesan cheese and salt and pepper. Drizzle with olive oil and place pan on heated grill. Cook for 15 minutes until tomatoes are heated and they begin to soften. Delicious as a side dish or appetizer!
